Preparing the Dough

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk until evenly mixed.

    In a separate bowl, whisk together the warm milk, eggs, and vanilla extract until well combined.

    Create a well in the center of the dry ingredients and pour in the wet ingredients. Mix using a wooden spoon or your hands until the dough starts to come together.

Frying Mandazi

    In a deep frying pan or pot, heat the oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of dough; it should sizzle and rise to the surface.

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about ½ inch thick and cut into triangles or circles.

    Fry the Mandazi

    Carefully place the shaped mandazi in the hot oil, a few at a time, making sure not to overcrowd the pan. Fry until golden brown, about 3-4 minutes per side.

    Use a slotted spoon to remove the mandazi from the oil and place them on a plate lined with paper towels to absorb excess oil.
