Method
Preparing the Dough
- 1
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk until evenly mixed.
- 2
- 3
Combine Mixtures
Create a well in the center of the dry ingredients and pour in the wet ingredients. Mix using a wooden spoon or your hands until the dough starts to come together.
- 4
Add Butter
Pour in the melted butter and knead the mixture until a smooth and elastic dough forms. This should take about 5-7 minutes.
- 5
Let Dough Rise
Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
Frying Mandazi
- 6
Prepare the Oil
In a deep frying pan or pot, heat the oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of dough; it should sizzle and rise to the surface.
- 7
Shape the Dough
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about ½ inch thick and cut into triangles or circles.
- 8
Fry the Mandazi
Carefully place the shaped mandazi in the hot oil, a few at a time, making sure not to overcrowd the pan. Fry until golden brown, about 3-4 minutes per side.
- 9
Drain and Cool
Use a slotted spoon to remove the mandazi from the oil and place them on a plate lined with paper towels to absorb excess oil.
- 10
Serve
Allow the mandazi to cool for a few minutes before serving. They can be enjoyed warm or at room temperature. Optionally, dust with powdered sugar before serving.
