1. Prepare the Spices
In a mortar and pestle, crush the cinnamon sticks, cardamom pods, and cloves until they are coarsely ground. Set aside.
2. Grate the Ginger
Using a grater, grate the fresh ginger root to yield about one tablespoon. Set aside with the crushed spices.
Brewing the Tea
3. Boil Water
In a medium saucepan, bring 4 cups of water to a boil over medium-high heat.
4. Add Spices
Once the water is boiling, add the prepared spices and grated ginger to the boiling water. Let it simmer for about 5 minutes.
5. Add Tea Leaves
After simmering, add 4 tablespoons of black tea leaves to the pot. Allow it to boil for another 3-5 minutes, depending on desired strength.
Finishing the Chai
6. Add Milk
Pour in 2 cups of milk into the pot with the tea and let it simmer for another 5 minutes, stirring occasionally.
7. Sweeten the Chai
Stir in 2 tablespoons of sugar or adjust to taste, ensuring it dissolves completely.
8. Strain and Serve
Using a fine mesh strainer, strain the chai into cups to remove the spices and tea leaves. Serve hot.
