Prepare the Lamb Filling

Marinate the Lamb
In a mixing bowl, combine the lamb shoulder pieces, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, olive oil, and lemon juice. Mix well to ensure the lamb is evenly coated with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.

Cook the Lamb
Preheat a grill or skillet over medium-high heat. Remove the marinated lamb from the refrigerator and cook for about 10-15 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the lamb is browned. Remove from heat and let it rest for 5 minutes before slicing.
Prepare the Vegetable Garnish

Slice the Vegetables
While the lamb is cooking, thinly slice the bell peppers and onion. Set aside. Rinse the lettuce leaves and pat them dry.
Assemble the Sandwich

Fill the Pita
Take a whole pita bread and gently open it to create a pocket. Fill the pita with sliced lamb, a generous amount of bell peppers, onions, and lettuce. Repeat with remaining pita breads.
