Method

Preparation

  1. 1

    Prepare the Collard Greens

Rinse the collard greens thoroughly under cold water to remove any dirt or grit. Remove the tough stems and central rib of each leaf, then chop the leaves into bite-sized pieces.

  2. 2

    Chop the Onion and Garlic

Peel and chop the onion into small pieces. Peel the garlic cloves and mince them finely.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

  2. 4

    Cook the Collard Greens

Add the chopped collard greens to the pot and stir well to combine with the onion and garlic. Pour in the vegetable broth, then add salt, black pepper, and red pepper flakes. Bring the mixture to a boil.

  3. 5

    Simmer

Once boiling, reduce the heat to low, cover the pot, and simmer for about 30-35 minutes, or until the collard greens are tender.

  4. 6

    Finish with Vinegar

After the greens are tender, stir in the apple cider vinegar. Adjust seasoning to taste and remove from heat.
