Method

Batter Preparation

  1. 1

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let cool slightly.

  2. 2

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened.

  3. 3

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, stirring continuously to prevent the eggs from cooking.

  4. 4

    Add Dry Ingredients

Sift in the all-purpose flour, salt, and vanilla extract. Gently fold the mixture using a spatula until just combined. Be careful not to overmix.

Baking

  1. 5

    Preheat Oven

Preheat your oven to 200°C (400°F). Grease and flour four ramekins or custard cups to prevent sticking.

  2. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  3. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  4. 8

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift off the ramekin. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
