    Rinse the Rice

    In a fine mesh strainer, rinse the basmati rice under cold running water until the water runs clear. This helps to remove excess starch and prevent the rice from becoming sticky.

    Soak the Rice

    Soak the rinsed basmati rice in cold water for 30 minutes. This allows the grains to absorb moisture and cook evenly.

Cooking the Pilau

    Heat Ghee or Oil

    In a large pot or saucepan, heat 2 tablespoons of ghee or oil over medium heat until hot.

    Add Aromatics

    Add the cumin seeds, cardamom pods, cloves, cinnamon stick, and bay leaf. Sauté for about 1-2 minutes until fragrant.

    Add Vegetables (if using)

    If you are using peas and diced carrots, add them to the pot and sauté for another 2-3 minutes until they are slightly tender.

    Add Rice

    Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the ghee and spices.

    Add Water and Salt

    Pour in 2 cups of water and add 1 teaspoon of salt. Stir once to combine.

    Bring to a Boil

    Increase the heat to high and bring the mixture to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 15-20 minutes until the rice is cooked and all the water is absorbed.

    Fluff and Serve

    Remove the pot from heat and let it sit covered for 5 minutes. Then, fluff the rice with a fork and serve warm.
