Method

Preparing the Fries

    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries.

    Soaking the Fries

    Place the cut fries in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch.

    Drying the Fries

    Drain the fries and pat them dry with a clean kitchen towel to remove as much moisture as possible.

    Frying the Fries

    In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the dried fries in batches and fry until golden brown, about 4-5 minutes.

    Draining and Seasoning

    Remove the fries and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

Grilling the Steak

    Pat the ribeye steaks dry with paper towels. Rub both sides with olive oil, salt, black pepper, garlic powder, and chopped rosemary.

    Preheat the grill to high heat (about 450°F to 500°F).

    Grilling the Steak

    Place the marinated steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or longer to reach your desired doneness.

    Once cooked, remove the steaks from the grill and let them rest for about 5 minutes before slicing.

    On a large plate, serve the grilled steak alongside a generous portion of fries. If desired, sprinkle with chopped parsley and serve with lemon wedges on the side.
