Prepare the Pork Belly
Preheat your oven to 220°C (428°F). Score the skin of the pork belly with a sharp knife, being careful not to cut into the meat.

Season the Pork
Rub the pork belly with olive oil, then generously season it with salt and black pepper, ensuring it gets into the scored skin.

Roast the Pork
Place the pork belly on a wire rack in a roasting pan. Roast in the preheated oven for 30 minutes, then lower the temperature to 180°C (356°F) and roast for an additional 1 hour, or until the skin is crispy and the meat is tender.

Rest and Slice
Remove the pork from the oven and let it rest for 10 minutes before slicing into pieces.
Apple Sauce

Cook the Apples
In a saucepan, combine the chopped apples, brown sugar, and cinnamon. Cook over medium heat, stirring occasionally until the apples are soft, about 15-20 minutes.

Add Lemon Juice
Once the apples are soft, remove from heat and stir in the lemon juice. Mash the mixture with a fork or potato masher until desired consistency is achieved.
