    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the diced carrots and celery to the pot, stirring well. Cook for about 5 minutes, allowing the vegetables to soften.

    Combine the Base Ingredients

    Pour in the vegetable broth and add the canned diced tomatoes (with juice), bay leaves, dried thyme, salt, and black pepper. Stir to combine and bring the mixture to a boil.

    Once boiling, reduce the heat to low and let the soup simmer for about 20 minutes.

    After 20 minutes, add the chopped green beans, diced potatoes, and fresh spinach to the pot. Stir well to combine.
