Cooking Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a boil. Add a pinch of salt.

    Cook Pasta

    Add the pasta to the boiling water. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, chop the bell pepper, zucchini, carrot, and broccoli into bite-sized pieces.

    Halve Cherry Tomatoes

    Cut the cherry tomatoes in half and set aside.

Making the Sauce

    Heat Olive Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté Garlic

    Add minced garlic to the skillet and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add the chopped bell pepper, zucchini, carrot, and broccoli to the skillet. Sauté for about 5-7 minutes until they begin to soften.

    Add Broth and Tomatoes

    Pour in the vegetable broth and add the halved cherry tomatoes. Cook for an additional 3-5 minutes.

    Season the Sauce

    Stir in lemon juice, salt, and black pepper to taste.

Combining and Serving

    Combine Pasta and Sauce

    Add the drained pasta to the skillet with the vegetables and sauce. Toss everything together until well combined.

    Serve hot, topped with grated Parmesan cheese.
