Roasted Sweet Potatoes
Prep and roast
Preheat oven to 425°F (220°C). Peel (optional) and cut sweet potatoes into 1/2-inch cubes so they total about 2 cups. In a bowl, toss the sweet potato cubes with 1 tablespoon olive oil, 3 teaspoons salt, 1 teaspoon freshly ground black pepper, and 1 teaspoon smoked paprika (if using) until evenly coated. Spread in a single layer on a rimmed baking sheet lined with parchment or a silicone mat.
Roast for 20–25 minutes, stirring/turning once halfway through, until sweet potatoes are tender and edges are lightly caramelized. Remove from oven and let cool slightly (5–10 minutes) so they stay warm but not piping hot when added to the salad.
Lemon-Basil Vinaigrette
Blend dressing
In a blender or food processor, combine 3 tablespoons fresh lemon juice, 4 tablespoons extra-virgin olive oil, 1 packed cup fresh basil leaves, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Blend until smooth and emulsified, about 20–30 seconds. Taste and adjust seasoning — add up to 1/2 teaspoon more honey if you prefer slightly sweeter, or more lemon if you prefer brighter acidity.
Transfer vinaigrette to a small bowl or jar. If too thick, whisk in 1–2 teaspoons warm water to reach desired consistency. Keep at room temperature until ready to dress the salad.
Assemble Salad
Prepare produce: core the Gala apple and cut into 1/4-inch thin slices or half-moons. Hull and quarter the strawberries (or slice thin if large). If using whole toasted almonds, roughly chop to create pieces that mix well through the salad.
In a large mixing bowl, place 6 cups baby arugula. Add 2 cups warm roasted sweet potatoes, the sliced Gala apple, 8 whole (quartered/sliced) fresh strawberries, and 1 cup dried cranberries. Toss gently to combine so warm potatoes slightly wilt the arugula — this helps meld flavors.
Drizzle about half of the lemon-basil vinaigrette over the salad (start with ~2 tablespoons), then toss gently. Taste and add more vinaigrette if desired, up to the remaining amount. The goal is a light, even coating that complements but does not drown the greens.
Finish: scatter 4 ounces crumbled goat cheese over the top and sprinkle 1 ounce toasted sliced almonds. If you like, finish with a few extra whole basil leaves or a small grind of black pepper.
Serve immediately while the sweet potatoes are still warm. Serves 4 as a hearty salad.
