    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into small cubes (about 1/2 inch).

    Cook the Potatoes

    In a large skillet, heat olive oil over medium heat. Add the cubed potatoes, paprika, garlic powder, and salt. Cook for about 15-20 minutes, stirring occasionally, until golden brown and tender. Set aside.

Veggie Scramble

    Prepare the Vegetables

    Dice the bell pepper, slice the red onion, and chop the zucchini. Rinse the spinach and chop it coarsely.

    Scramble the Eggs

    In a bowl, whisk together the local eggs, salt, and black pepper. In a skillet, heat a little olive oil over medium heat and add the vegetables. Sauté for about 5 minutes until they start to soften.

    Combine Ingredients

    Pour the whisked eggs over the sautéed vegetables in the skillet. Add the gruyere cheese, parsley, and chives. Gently stir until the eggs are fully cooked and the cheese is melted, about 3-5 minutes.

Toast

    Toast the Bread

    While the veggies are cooking, toast the slices of bread in a toaster or on a skillet until golden brown. Spread butter on each slice before serving.
