    Clean the Clams

    Rinse the fresh clams under cold water to remove any sand or grit. Scrub the shells gently with a brush if necessary. Discard any clams that are open and do not close when tapped.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove the bacon from the skillet and place on a paper towel to drain excess fat. Once cool, crumble the bacon into small pieces.

    Prepare the Garlic and Wine Mixture

    In the same skillet with the rendered bacon fat, add olive oil, minced garlic, and cook until fragrant (about 1 minute). Pour in the white wine and let it simmer for about 5 minutes until it reduces slightly.

    Mix the Filling

    In a mixing bowl, combine the breadcrumbs, crumbled bacon, chopped parsley, salt, black pepper, and half of the Parmesan cheese. Pour the garlic and wine mixture into the bowl and mix until all ingredients are well combined.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Stuff the Clams

    Open each clam shell and place it on a baking dish. Spoon the breadcrumb mixture generously onto the clams, pressing down slightly to adhere.

    Sprinkle the remaining Parmesan cheese over the stuffed clams to create a nice crust when baked.

    Bake the Clams

    Place the baking dish in the preheated oven and bake for 12-15 minutes or until the tops are golden brown and crispy.
