Method

Preparing the Chicken

    Cut the Chicken

    Cut the boneless chicken thighs into bite-sized pieces, about 2 inches each.

    Season the Chicken

    In a bowl, season the chicken pieces with black pepper and salt. Mix well to ensure even coating.

    Soak Skewers

    Soak the wooden skewers in water for at least 30 minutes to prevent burning during grilling.

Making Yakitori Sauce

    Combine Sauce Ingredients

    In a small saucepan, combine soy sauce, mirin, sugar, and sake.

    Cook the Sauce

    Bring the mixture to a simmer over medium heat and cook until the sugar dissolves. Allow to simmer for about 5 minutes until slightly thickened.

    Remove the sauce from heat and let it cool slightly.

Grilling the Chicken

    Skewer the Chicken

    Thread the seasoned chicken pieces onto the soaked wooden skewers, leaving a bit of space in between each piece.

    Preheat your grill or grill pan over medium-high heat.

    Place the chicken skewers on the grill and cook for about 5-7 minutes per side, brushing with the yakitori sauce during the last few minutes of cooking.

Preparing Strained Yogurt Topping

    To strain the yogurt, place it in a cheesecloth or a fine sieve set over a bowl and let it drain for at least 30 minutes.
