    Prepare the Steak

    Trim any excess fat from the strip steak and cut it into bite-sized cubes, approximately 1-inch in size.

    Prepare the Onion

    Peel the onion and cut it into quarters, then separate the layers to create onion pieces that are similar in size to the steak cubes.

    Soak Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Marinade

    Season the Steak

    In a bowl, combine the cut steak cubes with olive oil, salt, and black pepper. Mix well to ensure all pieces are evenly coated. Let it marinate for at least 15 minutes.

    Skewer the Ingredients

    Thread the marinated steak cubes and onion pieces alternately onto the skewers, leaving a little space between each piece for even cooking.

Cooking

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Grill the Skewers

    Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the steak is cooked to your desired doneness and the onions are tender and slightly charred.

Sauce Preparation

    Prepare the Au Poivre Sauce

    In a small saucepan, heat the brandy over medium heat until it simmers. Carefully ignite the brandy with a long lighter to flambé (optional). Allow the flames to die down, then add the heavy cream and stir, cooking until thickened, about 3-5 minutes. Season with additional black pepper to taste.

Serving

    Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot with the au poivre sauce drizzled on top or on the side.
