Method

Preparation

  1. 1

    Prepare the Vegetables

Wash and cut the bell peppers into bite-sized pieces. Slice the zucchini into thick rounds. Halve the cherry tomatoes if large. Peel and cut the red onion into wedges. Clean the mushrooms if whole and leave them as they are or halve them if large.

Marinade

  1. 2

    Make the Marinade

In a blender or food processor, combine the fresh basil leaves, pesto, lemon juice, olive oil, salt, and black pepper. Blend until smooth. Taste and adjust seasoning if necessary.

Assembly

  1. 3

    Skewer the Vegetables

Thread the prepared vegetables onto skewers, alternating between different types for a colorful presentation.

  2. 4

    Marinate the Skewers

Brush or drizzle the marinade generously over the skewers, ensuring all the vegetables are well coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

  2. 6

    Grill the Skewers

Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally until the vegetables are tender and slightly charred.

Serving

  1. 7

    Serve

Remove the skewers from the grill and let them rest for a few minutes. Serve warm as an appetizer or side dish.
