Preparation

    Prepare the vegetables

    Wash and chop the zucchini, bell pepper, carrot, and mushrooms into small pieces. Rinse the spinach and set aside.

    Cook the vegetables

    In a skillet over medium heat, add a little olive oil, then sauté the zucchini, bell pepper, carrot, and mushrooms for about 5-7 minutes until tender. Add the spinach and cook until wilted. Season with salt and pepper to taste. Remove from heat and set aside.

    Prepare the cheese mixture

    In a mixing bowl, combine ricotta cheese, egg, Parmesan cheese, salt, black pepper, and Italian seasoning. Mix until well combined.

Assembly

    Layer the lasagna

    Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles on top of the sauce, followed by half of the cooked vegetable mixture, half of the ricotta mixture, and a third of the mozzarella cheese. Repeat the layers: marinara sauce, noodles, vegetables, ricotta, and another third of mozzarella.

    Final Layer

    Top the last layer with the remaining noodles, marinara sauce, and the rest of the mozzarella cheese. Sprinkle with additional Parmesan cheese if desired.

Baking

    Bake the lasagna

    Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

    Let it rest

    Once baked, remove the lasagna from the oven and let it rest for 10-15 minutes before slicing and serving.
