Prepare Tuna Mixture

Combine Ingredients
In a medium bowl, combine the diced Ahi tuna, soaked hijiki seaweed, chopped green onions, sesame oil, soy sauce, and lime juice. Gently mix until well combined. Cover and refrigerate for about 15 minutes to let the flavors meld.
Make Avocado Mousse

Blend Ingredients
In a blender or food processor, combine the ripe avocados, lime juice, salt, and olive oil. Blend until smooth and creamy. Taste and adjust seasoning if necessary. Set aside.
Prepare Truffle Ponzu Sauce

Mix Sauces
In a small bowl, mix together the ponzu sauce and truffle oil. Adjust to taste and set aside.
Fry Wonton Shells

Prepare Wonton Shells
In a deep frying pan, heat the oil over medium-high heat. Once hot, carefully add the wonton wrappers, a few at a time, and fry until they are golden brown and crispy, about 1-2 minutes per side. Remove and drain on paper towels.
Assemble Tuna Tartaco

Fill Wonton Shells
Take each fried wonton shell and fill it with a spoonful of avocado mousse. Top with the tuna mixture and drizzle with the truffle ponzu sauce. Garnish with additional chopped green onions if desired.
