    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels. Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through.

    Season both sides of the chicken breasts with salt and black pepper.

Stuffing

    Make the Stuffing

    In a large bowl, combine the thawed spinach, chopped artichokes, softened cream cheese, grated Parmesan cheese, shredded mozzarella cheese, minced garlic, red pepper flakes, salt, and black pepper. Mix until well combined.

    Stuff the Chicken

    Stuff each chicken breast pocket with the prepared stuffing, using a spoon to pack it in tightly. Secure the opening of each chicken breast with toothpicks if necessary.

    Prepare the Breading

    Set up a breading station by placing the beaten eggs in one shallow dish and the panko breadcrumbs in another.

    Bread the Chicken

    Dip each stuffed chicken breast in the beaten eggs, allowing any excess to drip off. Then, coat the chicken in panko breadcrumbs, pressing gently to adhere.

    Cook the Chicken

    In a large skillet over medium-high heat, heat the olive oil. Once hot, add the breaded chicken breasts and cook for 4-5 minutes on each side, until golden brown. Transfer the chicken to a baking dish.

    Bake the chicken in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).

    Remove the toothpicks from the chicken breasts. Let them rest for a few minutes before slicing. Serve hot, garnished with fresh herbs if desired.
