Method

Steak Preparation

    Season the Steak

    Sprinkle salt and black pepper evenly on both sides of the NY Strip steaks.

    Cook the Steak

    In a skillet, heat olive oil over medium-high heat. Add the seasoned steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Rest the Steak

    Remove the steaks from the skillet and let them rest for at least 5 minutes before slicing.

Smoked Pepper Butter

    Prepare the Butter

    In a bowl, mix softened unsalted butter with smoked paprika, garlic powder, and black pepper until well combined.

    Chill the Butter

    Shape the butter mixture into a log, wrap it in plastic wrap, and refrigerate until firm.

Street Fries Preparation

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into fries, approximately 1/4 inch thick.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

    Season the Fries

    While still hot, sprinkle the fries with salt and grated asiago cheese.

Kecap Manis Preparation

    Combine Ingredients

    In a small saucepan, combine soy sauce, brown sugar, and minced garlic. Heat over low until the sugar dissolves, stirring frequently.

    Simmer the Sauce

    Allow the mixture to simmer for 5-7 minutes until slightly thickened. Remove from heat and let cool.

Truffle Aioli Preparation

    Mix Aioli Ingredients

    In a bowl, combine mayonnaise, truffle oil, lemon juice, and minced garlic. Stir until smooth and well blended.

    Chill the Aioli

    Refrigerate the aioli for at least 15 minutes before serving to allow flavors to meld.

Plating

    Assemble the Dish

    Slice the rested steak and place it on a serving plate. Serve with a generous portion of street fries, drizzle with kecap manis, and a side of truffle aioli.

    Garnish

    Chop scallions and sprinkle them over the steak and fries for a fresh finish.
