Vegan Ricotta Filling

Prepare the Tofu
Press the tofu to remove excess moisture. Crumble it into a mixing bowl.

Mix the Ingredients
Add nutritional yeast, lemon juice, garlic powder, salt, black pepper, and fresh basil to the crumbled tofu. Mix until well combined, creating a ricotta-like texture.

Prepare the Squash
Grate the summer squash and mix it into the vegan ricotta filling.

Stuff the Blossoms
Carefully open the squash blossoms and fill them with the vegan ricotta mixture without tearing the petals.

Add Coconut Milk
Pour in the coconut milk and season with salt. Simmer for 5-7 minutes until the mixture thickens slightly.
Jalapeño Puree

Prepare the Jalapeños
Remove the stems and seeds from the jalapeños. Chop them roughly.

Blend the Puree
In a blender, combine chopped jalapeños, lime juice, and salt. Blend until smooth, adjusting salt to taste.
Almond Coconut Crumble

Bake the Crumble
Spread the mixture on a baking sheet and bake at 180°C (350°F) for 10-12 minutes, stirring halfway through until golden brown.
