Mix the Marinade
In a medium bowl, combine fresh lime juice, sweet chili sauce, lime zest, minced garlic, olive oil, salt, and black pepper. Whisk together until well combined.

Marinate the Shrimp
Add the raw shrimp into the marinade, ensuring each shrimp is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 1 hour.

Prepare the Skewers
After marinating, take the soaked wooden skewers and begin threading the shrimp, bell pepper chunks, and red onion chunks alternately onto each skewer. Aim for 4-5 shrimp per skewer, with vegetables in between.

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Skewers
Place the assembled skewers on the grill. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque, and the vegetables are tender.

Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving. Enjoy your shrimp skewers with extra sweet chili sauce on the side if desired.
