Prepare the Bacon
In a large skillet over medium heat, cook the thick-cut bacon until crispy, about 5-7 minutes. Flip halfway through for even cooking. Once done, transfer to a paper towel-lined plate to drain excess grease.

Cook the Salmon
Using the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Season the salmon fillets with salt and pepper. Add to the skillet and cook over medium heat for about 4-5 minutes on each side or until cooked through and flakes easily with a fork. Remove and let rest.

Slice the Vegetables
While the salmon cooks, slice the heirloom tomato into 4 thick slices. If the pickled onion is whole, slice it thinly.

Assemble the Sandwich
On one slice of multigrain bread, spread a generous layer of chipotle aioli. Layer with 1 leaf of bibb lettuce, 2 slices of bacon, 1 salmon fillet, 1 slice of heirloom tomato, and a few slices of pickled onion. Top with another slice of multigrain bread.

Repeat for Remaining Sandwiches
Repeat the assembly process for the remaining sandwiches until all ingredients are used.

Serve
Cut the sandwiches in half and serve immediately. Enjoy your delicious Salmon BLT!
