In a saucepan, heat the chicken or vegetable broth over medium heat until it simmers. If using white wine, add it to the broth and keep it warm on low heat.

Toast the Rice
Add the Arborio rice to the skillet and stir to coat the grains in the oil. Toast the rice for about 2 minutes, stirring constantly.

Add Broth Gradually
Begin adding the warm broth to the rice, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 15-20 minutes until the rice is creamy and al dente.

Incorporate Seafood
With about 5 minutes left of cooking, add the shrimp, clams, and lobster meat to the risotto. Stir gently to combine. Cook until the shrimp are pink and cooked through.

Add Pesto and Cheese
Once the rice is cooked and creamy, remove the skillet from heat. Stir in the pesto sauce and grated Parmesan cheese. Season with salt and black pepper to taste.
