Method

For the Ribeye Steak

  1. 1

    Prepare the Steak

Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes.

  2. 2

    Season the Steak

Pat the steaks dry with paper towels. Rub each steak with olive oil, then season both sides generously with salt and black pepper.

  3. 3

    Heat the Pan

Heat a cast-iron skillet over medium-high heat until very hot.

  4. 4

    Cook the Steak

Add the steaks to the skillet and cook for about 4-5 minutes on each side for medium-rare, adding garlic cloves and rosemary to the pan for flavor.

  5. 5

    Rest the Steak

Remove the steaks from the skillet and let them rest for 5-10 minutes before serving.

For the Mashed Potatoes

  1. 6

    Prepare the Potatoes

Peel and dice the potatoes into uniform chunks. Place them in a large pot and cover with cold water.

  2. 7

    Boil the Potatoes

Bring the water to a boil and then reduce to a simmer. Cook the potatoes for about 15-20 minutes, or until fork-tender.

  3. 8

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

For the Grilled Asparagus

  1. 9

    Prepare the Asparagus

Trim the tough ends off the asparagus and rinse them under cold water.

  2. 10

    Season the Asparagus

In a bowl, toss the asparagus with olive oil, salt, and black pepper.

  3. 11

    Grill the Asparagus

Preheat a grill or grill pan over medium heat. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred.
