Method

Steak Tartar Preparation

    Prepare the Steak

    Finely dice the filet mignon into small cubes and place in a mixing bowl.

    Add Ingredients

    Finely chop shallots, capers, parsley, and chives. Add them to the bowl with the steak.

    Season the Mixture

    Add Dijon mustard, olive oil, salt, and freshly ground black pepper to the bowl. Mix well.

    Finish with Egg Yolk

    Add the egg yolk to the mixture and stir until fully incorporated. Adjust seasoning to taste.

Sauce Gribiche Preparation

    Prepare Hard-Boiled Eggs

    Peel the hard-boiled eggs and chop them coarsely.

    Mix Sauce Ingredients

    In a bowl, combine chopped eggs, Dijon mustard, white wine vinegar, and olive oil. Mix well.

    Add Herbs and Season

    Finely chop capers, parsley, and chives, and add them to the sauce mixture. Season with salt and pepper to taste.

Grilled Crostini Preparation

    Prepare the Baguette

    Slice the baguette into 1/2-inch thick slices.

    Grill the Slices

    Brush both sides of the baguette slices with olive oil. Grill until golden and crispy on both sides.

    Once grilled, rub one side of each crostini with a halved garlic clove for flavor.
