Cooking Polenta

In a large pot, bring 4 cups of water to a boil over medium-high heat. Add 1 teaspoon of salt to the water.

Add the Polenta
Once the water reaches a rolling boil, gradually whisk in 1 cup of polenta (cornmeal) to prevent lumps from forming.

Cook the Polenta
Reduce the heat to low and continue stirring the mixture frequently with a wooden spoon or whisk. Cook for about 30 to 40 minutes, or until the polenta is thick and creamy. You may need to add more water if it becomes too thick.

Once cooked, remove the pot from heat and stir in 2 tablespoons of butter, 1 cup of Parmesan cheese, and 2 tablespoons of olive oil, if desired. Season with black pepper and fresh herbs to taste.
