Cooking the Pasta

Boil the Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.

Drain the Pasta
Once the pasta is cooked, drain it in a colander and set aside. Make sure to reserve about half a cup of the pasta water for later use.
Making the Marinara Sauce

Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add the Tomatoes
Pour in the can of San Marzano tomatoes, breaking them up with a spoon. Stir in the dried basil, dried oregano, salt, and black pepper. Bring the sauce to a simmer and let it cook for about 15-20 minutes, stirring occasionally.
Combining Pasta and Sauce

Mix Pasta with Sauce
Once the sauce has thickened slightly, add the drained penne pasta to the skillet. Toss to coat the pasta in the marinara sauce, adding a bit of the reserved pasta water if the sauce is too thick.

Serve
Remove from heat and stir in the grated Parmesan cheese until melted and evenly distributed. Serve hot, garnished with fresh basil if desired.
