Cook the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes.

    Drain the Pasta

    Once cooked, drain the pasta and set aside, reserving about 1 cup of pasta water.

Prepare the Vodka Sauce

    Sauté Shallots

    In a large skillet, heat the olive oil over medium heat. Add the minced shallots and sauté for about 3-4 minutes until they are soft and translucent.

    Add Garlic

    Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.

    Simmer Vodka

    Carefully pour in the vodka and let it simmer for about 5 minutes, allowing the alcohol to cook off.

    Combine Ingredients

    Stir in the crushed tomatoes, heavy cream, salt, and black pepper. Allow the mixture to simmer for another 10 minutes, stirring occasionally.

    Finish the Sauce

    Add the grated Parmesan cheese and chopped basil to the sauce, stirring until the cheese is melted and everything is well combined.

Combine Pasta and Sauce

    Mix Pasta with Sauce

    Add the cooked penne pasta to the skillet with the vodka sauce. Toss gently to coat the pasta evenly, adding reserved pasta water as needed to reach desired consistency.

    Serve hot, garnished with additional Parmesan cheese and fresh basil if desired.
