Method

Cooking the Pasta

  1. 1

    Step 1: Boil Water

In a large pot, bring 4 quarts of salted water to a rolling boil.

  2. 2

    Step 2: Cook Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.

  3. 3

    Step 3: Drain Pasta

Once cooked, drain the pasta in a colander and set aside.

Preparing the Vegetables

  1. 4

    Step 4: Sauté Vegetables

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

  2. 5

    Step 5: Add Vegetables

Add bell peppers, zucchini, cherry tomatoes, carrots, and broccoli to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

Making the Sauce and Combining

  1. 6

Step 6: Add Broth and Seasoning

Pour in the vegetable broth, and season with salt and black pepper. Stir to combine and let it simmer for another 3-4 minutes.

  2. 7

Step 7: Combine Pasta and Sauce

Add the drained pasta to the skillet with the vegetables and sauce. Toss everything together until well mixed.

  3. 8

    Step 8: Serve

Remove from heat and stir in the grated Parmesan cheese and chopped fresh basil. Serve warm.
