Panini Preparation

Sauté the Broccoli Di Rabe
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the broccoli di rabe and sauté for 5-7 minutes until tender. Season with salt and black pepper to taste.

Cook the Sausage
In the same skillet, add the Italian sausage (remove casing if using link sausage) and cook for about 4-5 minutes until browned and cooked through. Chop into small pieces and combine with the sautéed broccoli di rabe.

Assemble the Panini
On one slice of Casa Pane bread, layer the broccoli and sausage mixture, sundried tomatoes, and top with fontina cheese. Place another slice of bread on top.

Toast the Panini
Preheat a panini press or skillet over medium heat. Brush the outside of the assembled sandwich with remaining olive oil. Grill the sandwich for about 3-4 minutes until golden brown and the cheese is melted. If using a skillet, use a heavy pan to press down on the sandwich while toasting.

Prepare the Fries
Wash and peel the potatoes, then cut them into fries. In a large pot of salted boiling water, blanch the fries for about 5 minutes, then drain and let them dry. Preheat oil in a deep fryer or a large pot and fry the potatoes until golden and crispy, about 4-5 minutes. Season with salt.
