Prepare the Ingredients
Begin by preheating your oven to 375°F (190°C). While the oven is heating, wash and slice the local apple into thin wedges. Chop the green onion, separating the white and green parts.

Stuff the Dates
Make a small slit in each Medjool date and remove the pit. Stuff each date with a slice of pancetta, a slice of manchego cheese, and a slice of linguiça sausage.

Wrap the Dates
Wrap each stuffed date with a piece of pancetta and secure it with a toothpick. Place the wrapped dates on a baking sheet lined with parchment paper.

Bake the Dates
Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the pancetta is crispy and the cheese is melted.

Prepare the Apple and Sauce
While the dates are baking, arrange the apple wedges on a serving platter. Drizzle the sweet chili sauce over the apple slices. Sprinkle the chopped green onion on top.

Once the dates are done baking, remove them from the oven and let them cool slightly. Serve warm alongside the apple slices drizzled with sweet chili sauce, garnished with the green onion.
