Method

Prepare the Falafel

    Soak Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Let them soak overnight.

    Blend Ingredients

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, onion, garlic, parsley, cumin powder, baking powder, salt, and pepper. Blend until the mixture is coarse but holds together.

    Form Balls

    Shape the mixture into small balls or patties, about the size of a tablespoon.

    Fry Falafel

    Heat oil in a deep frying pan. Fry the falafel balls in batches until golden brown and crispy, about 4-5 minutes. Drain on paper towels.

Prepare the Haloumi

    Slice Haloumi

    Cut the haloumi cheese into thick slices, about 1 cm each.

    Grill Haloumi

    Heat a non-stick grill pan over medium heat. Grill the haloumi slices for 2-3 minutes on each side until golden brown.

Prepare the Vegetables

    Chop Vegetables

    Slice the cucumber, chop the tomatoes, and grate the carrots. Arrange them on a serving platter.

Assemble the Platter

    Arrange Ingredients

    On a large serving platter, arrange the pita bread, fried falafel, grilled haloumi, crumbled feta, and the sliced vegetables.

    Serve

    Serve the Mediterranean platter with your favorite dipping sauces like tahini or yogurt.
