Method
Crust
- 1
Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and salt. Melt the unsalted butter and pour it into the crumb mixture. Stir until the mixture resembles wet sand.
- 2
Form and Bake the Crust
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish to form an even layer. Bake in the preheated oven for 8-10 minutes, or until golden brown. Remove from oven and let it cool completely.
Lime Custard
- 3
Mix the Custard Ingredients
In a medium bowl, whisk together the egg yolks and sweetened condensed milk until well combined. Add the fresh lime juice and lime zest, and whisk until smooth and creamy.
- 4
Bake the Custard
Pour the lime custard mixture into the cooled graham cracker crust. Bake in the oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Remove from oven and let it cool at room temperature.
- 5
Chill and Serve
Once cooled, refrigerate the key lime pie for at least 2 hours to allow it to set completely. Before serving, top with whipped cream as desired.
