Preparing the Saffron Risotto

Toast the Rice
Add the Arborio rice to the pan and toast for 1-2 minutes, stirring continuously until the rice is slightly translucent.

Add the Wine
Pour in the white wine and cook until it’s fully absorbed by the rice.

Incorporate the Broth and Saffron
Begin adding the chicken broth one ladle at a time, stirring frequently, allowing the rice to absorb the broth before adding more. Add the saffron threads after the first ladle of broth. Continue this process for about 18-20 minutes until the rice is al dente.

Finish the Risotto
Once cooked, stir in the Parmesan cheese, remaining butter, and season with salt and black pepper to taste. Remove from heat and let it cool slightly.

Combine the Filling Ingredients
In a medium bowl, mix together the shredded veal, peas, and mascarpone cheese until well combined.
Assembling the Arancini

Form the Arancini
Once the saffron risotto is cool, take a small handful and flatten it in your palm. Place a tablespoon of the filling in the center and mold the risotto around it, forming a ball. Repeat until all the risotto and filling are used.

Bread the Arancini
Dredge each ball in flour, dip in the beaten eggs, and coat with bread crumbs, ensuring they are well-covered.

Heat the Oil
In a large, deep skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Arancini
Carefully add the arancini to the hot oil in batches, frying for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Serve the arancini warm with marinara sauce or your favorite dipping sauce.
