Grilled Salmon

    Prepare the Marinade

    In a small bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Place the marinated salmon on the grill. Grill for about 4-6 minutes on each side, or until the salmon flakes easily with a fork.

Dill Sauce

    In a bowl, combine Greek yogurt, fresh dill, lemon juice, minced garlic, and salt. Mix until smooth.

    Cover and refrigerate the dill sauce until ready to serve.

Quinoa Salad

    Rinse quinoa under cold water in a fine mesh strainer.

    In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork and let cool.

    In a large bowl, combine cooked quinoa, diced cucumber, cherry tomatoes, and red onion.
