Method

Preparation of the Grilled Octopus

    Cleaning the Octopus

    Rinse the octopus under cold water to remove any sand or debris. Pat dry with paper towels.

    Marinating the Octopus

    In a bowl, combine olive oil, juice of the lemon, minced garlic, salt, and black pepper. Add the octopus and coat well. Marinate for at least 30 minutes.

    Grilling the Octopus

    Preheat the grill to medium-high heat. Grill the octopus for about 3-4 minutes on each side until charred and cooked through. Remove from the grill and let it rest for a few minutes before slicing.

    Blending the Ingredients

    In a food processor, combine the canned chickpeas (drained), tahini, lemon juice, minced garlic, olive oil, salt, and water. Blend until smooth and creamy. Adjust seasoning if necessary.

    Frying the Chickpeas

    In a saucepan, heat olive oil over medium heat. Add the canned chickpeas and fry until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

    Plating the Dish

    On a serving plate, spread a generous amount of garbanzo puree. Top with sliced grilled octopus, a dollop of creme fraiche, and a handful of arugula. Garnish with the fried chickpeas for added crunch.
