    Wash and Cut Potatoes

    Wash 4 Russet potatoes thoroughly under cold running water to remove any dirt. Peel the potatoes if desired. Cut them into even strips, about 1/4 inch thick, to ensure they cook uniformly.

    Soak the Potatoes

    Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Cooking

    Preheat Oven

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

    Drain and Dry Potatoes

    After soaking, drain the potatoes and pat them dry with a kitchen towel or paper towels to remove excess moisture.

    Toss with Olive Oil

    In a large bowl, combine the dried potato strips with 1 cup of olive oil. Toss until all the fries are evenly coated.

    Season the Fries

    Add 1 tsp of sea salt, 1 tbs of dried rosemary, and 2 tbs of truffle oil to the bowl of fries. Toss again until the potatoes are well seasoned.

    Bake the Fries

    Spread the seasoned potato strips in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

    Add Parmesan

    Once the fries are done baking, remove them from the oven and immediately sprinkle 1 cup of grated Parmesan cheese over the hot fries. Toss gently to ensure the cheese adheres to the fries.

    Serve the fries hot, garnished with additional rosemary if desired, and enjoy your delicious truffle, rosemary, and Parmesan fries!
