Preparation

    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a criss-cross pattern, being careful not to cut into the meat. Season generously with salt and pepper.

    Roast the Pork Belly

    Place the pork belly in a roasting pan, skin-side up. Roast for about 2-2.5 hours, or until the skin is crispy and the meat is tender.

    Cook the Sausage

    While the pork belly is roasting, heat a skillet over medium heat. Add the sausage, breaking it apart with a spatula, and cook until browned and cooked through, about 8-10 minutes. Remove from heat and set aside.

    Prepare the Figs and Cheese

    In a bowl, combine the chopped Black Mission figs with the shredded Manchego and Mozzarella cheeses. Mix well to combine.

    Assemble the Dish

    Once the pork belly is done, let it rest for about 10 minutes, then slice into bite-sized pieces. On a serving platter, layer the arugula as the base, top with the sliced pork belly, followed by the cooked sausage, and finally the fig and cheese mixture.

    Drizzle with Spicy Honey

    Finish the dish by drizzling spicy honey over the top for an added kick of flavor.
