Chocolate Lava Cake

Mixed Berry Parfait

Method

Chocolate Lava Cake

  1. 1

    Melt Chocolate and Butter

Preheat your oven to 200°C (390°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring occasionally. Once melted and smooth, remove from heat and let cool slightly.

  2. 2

    Prepare Eggs and Sugar

In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened. This should take about 3-4 minutes.

  3. 3

    Combine Mixtures

Pour the melted chocolate and butter mixture into the eggs and sugar mixture. Add the vanilla extract and a pinch of salt. Gently fold in the all-purpose flour until just combined; do not overmix.

  4. 4

    Bake the Cakes

Grease four ramekins with butter and dust with cocoa powder. Divide the batter evenly among the ramekins. Place them on a baking tray and bake for 12-14 minutes until the edges are firm but the center is still soft.

  5. 5

    Serve

Let the cakes cool for 1 minute, then invert them onto individual plates. Serve immediately with a scoop of vanilla ice cream or a sprinkle of powdered sugar.

Mixed Berry Parfait

  1. 6

    Prepare Berries

Wash and dry the mixed berries thoroughly. If using strawberries, hull and slice them into smaller pieces.

  2. 7

    Layer Ingredients

In a serving glass or bowl, start with a layer of Greek yogurt at the bottom. Add a layer of mixed berries followed by a layer of granola. Repeat the layers until the glass is full, finishing with berries on top.

  3. 8

    Drizzle with Honey

Drizzle honey over the top layer of berries. Optionally, garnish with fresh mint leaves for an added touch.

  4. 9

    Serve

Serve immediately for a fresh and healthy dessert option. Enjoy your parfait!
