Preparing the Burger Patty

Form the Patties
In a large bowl, combine the Kobe beef short rib blend with salt and black pepper. Mix gently to avoid overworking the meat. Divide the mixture into 4 equal portions and form each into a patty, about ¾ inch thick.

Chill the Patties
Place the formed patties on a plate and cover with plastic wrap. Refrigerate for at least 30 minutes to help them hold their shape while cooking.

Cook the Patties
Remove the patties from the refrigerator and grill them for about 4-5 minutes on one side. Flip the patties and place a slice of Vermont aged cheddar cheese on top. Cook for an additional 4-5 minutes, or until the cheese is melted and the patty reaches your desired doneness.
Assembling the Burger

Prepare the Bun
While the patties are cooking, lightly toast the burger buns on the grill or in a toaster until golden brown.

Layer the Ingredients
Spread a generous spoonful of truffle aioli on the bottom half of each bun. Place a cooked patty on top, followed by a scoop of onion jam, a few leaves of Bibb lettuce, slices of heirloom tomato, and pickles. Top with the other half of the bun.

Serve the Burgers
Serve the burgers immediately with extra truffle aioli and pickles on the side. Enjoy your classic burger!
