Prepare the Chocolate

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second intervals, stirring in between until smooth. Allow it to cool slightly.
Whip the Egg Mixture

Whisk the Eggs and Sugar
In a large mixing bowl, whisk together the eggs and granulated sugar until the mixture becomes pale and fluffy, about 5 minutes.

Add Vanilla and Salt
Add the vanilla extract and a pinch of salt to the egg mixture, then continue to whisk until combined.
Combine Ingredients

Fold in Melted Chocolate
Gently fold the melted chocolate into the egg mixture until well combined, being careful not to deflate the mixture.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip, as you want a light and airy texture.

Incorporate Whipped Cream
Gently fold the whipped cream into the chocolate and egg mixture in three additions, ensuring not to lose the volume of the cream.
Chill the Mousse

Transfer to Serving Dishes
Spoon the mousse into individual serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
Garnish and Serve

Before serving, top each mousse with whipped cream, chocolate shavings, and fresh berries if desired.
