Cake Preparation

- 2
Melt Chocolate and Butter
In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth. Allow to cool slightly.
- 3
Mix Sugar and Eggs
In a large mixing bowl, whisk together granulated sugar, large eggs, and large egg yolks until the mixture is pale and fluffy. This should take about 3-4 minutes.
- 4
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously. Add the vanilla extract and mix until combined.
- 5
Add Dry Ingredients
Sift in the all-purpose flour and a pinch of salt. Fold the mixture gently until just combined. Be careful not to overmix.
- 6
Pour into Ramekins
Evenly distribute the batter into the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.
- 8
Rest and Serve
Remove the ramekins from the oven and let them rest for 1 minute. Carefully run a knife around the edges, then invert onto plates. Serve immediately with scoops of vanilla ice cream and top with chocolate shavings if desired.
