Brisket

Eggs

Avocado Crema

Method

Prepare the Brisket

  1. 1

    Sear the Brisket

In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Season the brisket with salt and black pepper, then sear it on all sides until browned, about 4-5 minutes per side.

  2. 2

    Sauté Aromatics

Remove the brisket and set aside. In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

  3. 3

    Add Tomatoes and Spices

Add canned diced tomatoes, cumin, paprika, and beef broth to the pot. Stir well to combine.

  4. 4

    Braise the Brisket

Return the brisket to the pot, cover, and let it simmer on low heat for about 2 hours, or until the brisket is tender.

  5. 5

    Shred the Brisket

Once cooked, remove the brisket from the pot, shred it with two forks, and return it to the sauce. Stir in chopped fresh cilantro and keep warm.

Prepare the Tortilla

  1. 6

    Fry the Tortillas

In a skillet, heat vegetable oil over medium heat. Fry each corn tortilla for about 30 seconds on each side or until crispy. Drain on paper towels.

Cook the Eggs

  1. 7

    Fry the Eggs

In a non-stick skillet, fry the eggs sunny-side up or to your desired doneness. Season with a pinch of salt.

Make Avocado Crema

  1. 8

    Blend the Ingredients

In a blender, combine avocado, sour cream, lime juice, and salt. Blend until smooth and creamy.

Assemble the Dish

  1. 9

    Layer the Ingredients

On each crispy tortilla, layer a generous portion of the brisket, top with fried egg, sprinkle cheddar cheese, and drizzle with avocado crema.
