Add canned diced tomatoes, cumin, paprika, and beef broth to the pot. Stir well to combine.

Return the brisket to the pot, cover, and let it simmer on low heat for about 2 hours, or until the brisket is tender.

In a skillet, heat vegetable oil over medium heat. Fry each corn tortilla for about 30 seconds on each side or until crispy. Drain on paper towels.

In a blender, combine avocado, sour cream, lime juice, and salt. Blend until smooth and creamy.
