Preparation of Ingredients

    Prepare Heirloom Tomatoes

    Wash the heirloom tomatoes thoroughly under running water. Pat dry with a clean towel.

    Slice Tomatoes

    Remove the stems and slice the tomatoes into thick rounds.

    Prepare Basil

    Wash the fresh basil leaves and set aside.

    Roast Pear

    Halve the pear, remove the seeds, and lightly roast it in an oven at 350°F (175°C) for about 15 minutes until soft.

Making Truffle Burrata

    Combine Cheese and Cream

    In a mixing bowl, combine mozzarella cheese and heavy cream. Mix well until smooth.

    Add Truffle Oil and Seasonings

    Add truffle oil, salt, and pepper to the mixture. Stir until fully incorporated.

    Chill Truffle Burrata

    Transfer the mixture to a cheesecloth, gather the edges, and form a pouch. Let it sit in the refrigerator for at least 1 hour.

Making Balsamic Pearls

    Heat Balsamic Mixture

    In a saucepan, heat balsamic vinegar and water over medium heat until it starts to simmer.

    Add Agar-Agar

    Sprinkle agar-agar powder into the mixture and stir continuously for about 2 minutes until dissolved.

    Form Balsamic Pearls

    Using a dropper, carefully drop the mixture into a bowl of ice-cold oil. The droplets will form pearls.

    Rinse Pearls

    Let the pearls sit in the oil for 10 minutes, then remove and rinse with cold water.

Assembly

    Plate Tomatoes

    On a serving plate, arrange the sliced heirloom tomatoes in a circle.

    Add Truffle Burrata

    Spoon the homemade truffle burrata in the center of the tomatoes.

    Add Roasted Pear

    Place the roasted pear halves around the tomatoes and burrata.

    Garnish and Serve

    Garnish with fresh basil leaves and drizzle balsamic pearls over the entire dish.
