Chipotle Aioli

    Prepare the Chipotle Aioli

    In a medium bowl, combine mayonnaise, chipotle peppers in adobo sauce, lime juice, minced garlic, and salt. Mix well until smooth and creamy. Adjust seasoning to taste. Set aside.

Cook the Bacon

    Cook the Thick-Cut Bacon

    In a skillet over medium heat, cook the thick-cut bacon slices until crispy, about 8-10 minutes, turning occasionally. Once cooked, transfer to a paper towel-lined plate to drain excess grease.

Cook the Salmon

    Blacken the Salmon

    Pat the salmon fillets dry with paper towels. Rub each fillet with olive oil and coat evenly with blackening spice. Heat a skillet over high heat until very hot. Add the salmon fillets and cook for about 3-4 minutes on each side, or until the salmon is cooked through and has a blackened crust. Remove from heat.

Assemble the Sandwich

    Build the Blackened Salmon BLT

    Toast the multigrain bread slices until golden brown. Spread a generous amount of chipotle aioli on one side of each slice of bread. Layer with Bibb lettuce, followed by slices of heirloom tomato, crispy bacon, and blackened salmon. Top with pickled onions and cover with another slice of bread, aioli side down. Cut in half and serve.
