    Caramelize the Onions

    In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions and a pinch of salt. Cook for about 20-25 minutes, stirring occasionally, until they are golden brown and caramelized.

    Prepare the Shallots

    Finely slice the shallots. In the same skillet used for the onions, add 1 tablespoon of butter over medium heat. Once melted, add the sliced shallots and cook until crispy and golden, about 5-7 minutes. Remove and set aside.

Assemble the Sandwich

    Layer the Ingredients

    Take 2 slices of Casa bread and spread a thin layer of butter on one side of each slice. On the unbuttered side, layer half of the aged cheddar cheese, followed by a portion of sliced brisket, caramelized onions, and crispy shallots. Top with the remaining cheese and place another slice of bread on top, buttered side up.

Grill the Sandwich

    Grill Until Golden

    In a skillet over medium heat, place the assembled sandwich. Grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted. You may cover the skillet to help the cheese melt evenly.

Serve

    Slice and Serve

    Once grilled, remove the sandwich from the skillet and let it rest for a minute. Slice in half and serve warm with your favorite dipping sauce or pickle on the side.
