1. Prepare the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until frothy. Add salt and flour, and mix until a dough forms.
2. Knead the Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
3. Shape the Pretzel Bites
Preheat the oven to 425°F (220°C). After the dough has risen, punch it down and roll it into ropes. Cut the ropes into bite-sized pieces.
4. Boil and Bake
In a large pot, bring 10 cups of water to a boil, and add baking soda. Boil the pretzel bites for 30 seconds, then transfer to a baking sheet lined with parchment paper. Sprinkle with coarse sea salt.
5. Bake
Bake in the preheated oven for 12-15 minutes or until golden brown.
