1. Prepare the Pasta
In a large pot of salted boiling water, cook the trottole pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.
2. Sauté the Leeks
In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté until softened and lightly golden, about 5-7 minutes.
3. Combine Ingredients
Stir in the squid ink and Calabrian chili paste into the skillet with the leeks. Mix well to combine and cook for another 2 minutes.
4. Toss the Pasta
Add the cooked trottole to the skillet, tossing to coat the pasta in the sauce. If the mixture seems dry, add a splash of reserved pasta water.
5. Add the Uni
Remove from heat and gently fold in the sea urchin (uni) and chopped parsley. Season with salt and black pepper to taste.
