    Prepare the Sauce

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until softened, about 5 minutes.

    Add the minced garlic and cook for an additional 1 minute until fragrant.

    Increase the heat to medium-high and add the ground beef and nduja sausage. Cook until the meat is browned, breaking it apart with a spoon.

    Pour in the red wine, scraping any bits off the bottom of the pan. Allow it to reduce for 2-3 minutes.

    Stir in the crushed tomatoes, salt, and black pepper. Reduce heat to low and let the sauce simmer for 30-40 minutes, stirring occasionally.

    Cook the Pasta

    Meanwhile, bring a large pot of salted water to a boil. Add the paccheri and cook according to package instructions until al dente, usually about 10-12 minutes.

    Reserve 1 cup of pasta cooking water, then drain the pasta.

    Combine and Serve

    Add the drained paccheri to the sauce, tossing to combine. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

    Serve the paccheri bolognese hot, topped with grated pecorino cheese and fresh basil for garnish.
